Coconut chicken soup

Here is the recipe for our coconut, chicken soup!

Ingredients:

– 300-400g Organic chicken mince
– 1-2 broccoli heads
– 1 zucchini
– 3 cloves of purple garlic
– Fresh grated turmeric
– Fresh grated ginger
– Fresh coriander
– Pink salt and pepper
– 1 long red chilli
– 1/2-1 can coconut milk
– 1-2 cups chicken broth (or stock preferably home made)
– 1 TBSP coconut oil

Method:

1. Pre prepare veg- cut off broccoli stems, dice zucchini, grate turmeric, ginger and garlic, slice red onion

2. Roll chicken mince into small balls slightly larger then teaspoon in portion then set aside

3. Pre-heat pan with coconut oil add chilli, garlic, ginger and turmeric

4. Add chicken broth/stock and 1/2 coconut milk to sauce-pan

5. Add veg allow to cook for 10 mins and season with salt and pepper if desired

6. Add chicken balls and allow to simmer on low for 30-45 mins the longer you can leave it the more infused the flavours

^^^NOTE: We always like to taste the flavours around the 30 minute mark and then you can decide if it needs a little more coconut milk or potentially even some filtered water if you want to lessen the intensity

7. Serve and add freshly chopped coriander on top
